Games that make music seem organic and not a file slipped into the game really help with the immersion. The Witcher 2 and S.T.A.L.K.E.R. do a great job with this. Hearing the pluck of each guitar string from a fellow solider around the camp fire or the rough strum of a bard in a tavern starts to convince you that there are real people playing songs in the game rather than a studio-recorded, perfected soundtrack.
